Class Type: Hands-On! These are our most involved and participatory classes, where you get the opportunity to learn a hands-on skill. Anyone can do it, though--no prior experience required to attend!

WHAT YOU'LL GET IN THIS CLASS:

  • Chef-led cooking demonstration.
  • Hands-on experience making your own rough puff pastry dough to take-and-bake and a pie dough using the fraisage method from scratch, which you'll use to make hand pies and bake off during the class. 
  • Coffee, tea, juice, and other beverages.
  • Pastries to snack on and learn from.
  • Take-home notes and recipe.
  • Some lasting memories!
Buttery, flaky, and shatteringly crisp pastry is essential in a baker's repertoire. But puff pastry can be time-consuming and finicky! We'll show you two great alternatives to full puff pastry, though: rough puff and a pie dough using the fraisage method. Rough puff has all the texture and flavor of all puff pastry without the the fuss, while dough made with the fraisage method gets you lamination almost on par with croissants. Join Chef Zoe in this hands-on class, where you'll learn the skill of making rough puff pastry and pie doughs from scratch. We'll cover everything from the importance of buying quality ingredients, keeping things cool, how to bring your dough all together, and its perfect applications to make ultra-flaky pie crusts, turnovers, palmiers, tarts, and more. In addition to making your own take-and-bake rough puff, you'll make hand pies from your fraisage dough to bake off during the class. We'll also have some pastries baked off for you to enjoy, pull apart, and study so you can get a sense of how it all comes together. Bakers of all skill level are welcome!

DIETARY: Please note that our cooking classes may include gluten, eggs, dairy, nuts, and/or meat products. Please state any dietary restrictions in the registration form or via email, and we'll do our best to accommodate.

IMPORTANT STUFF: 

  • Tickets are non-refundable. If you cannot attend a class you have registered for, registration may be transferable to another France 44 class if given a 48+ hour notice.
  • Please notify France 44 with any dietary restrictions or preferences.
  • Parking in our lot is limited, however, parking is available on 44th Street, France Ave, and Drew Ave S.

MEET THE INSTRUCTOR:

Zoe Moskowitz

Zoe runs our catering team here at France 44. She comes to us with a both a culinary and pastry background, and is passionate about culinary education & helping people figure out how to cook more at home. Zoe is looking forward to bringing some new ideas to the catering, events, and class offerings, and working with all of the different teams to do so!
