We interrupt our regularly scheduled pizza making classes to bring you FLAME CAKES!! Flammkuchen or tarte flambée (literally "flame cakes") are traditional Alsatian flatbreads perfect for the wintertime. In Alsace, before the advent of thermometers, bakers made Flammkuchen to test the temperature of their ovens. When the Flammkuchen came out of the ovens nicely blistered and with an ultra crispy crust, the bakers knew their ovens were ready for them to bake their other goods. These long, crispy "pizzas" remain popular today and are ubiquitous throughout much of central Europe. They are traditionally topped with crème fraîche, leeks, bacon, and chives, but we'll also have a variety of other toppings for you to choose from. You'll get to make, shape, top, and bake your own Flammkuchen from scratch and enjoy them piping-hot from the oven. There's something immensely comforting about Flammkuchen on a chilly Winter's evening and a glass of dry Riesling.
